Marble Butter Cake with Honey Almond Crust

My last bake is not bad. This time I tried marble butter cake.

Ingredients:
125gm salted butter
2 eggs
30ml milk
1/2 tsp vanilla essence
100gm self raising flour
25gm + 75gm sugar
100gm almond flour
1 tbsp cocoa powder

Toppings:
50gm honey
80gm almond flakes
30gm butter

Method:
1) Preheat over 180'C, (I use rice cooker), separate egg white & yolk
2) Beat egg white until soft peak then add in 50gm sugar & beat.
3) Cream butter & 150gm sugar until pale then add in vanilla essence & egg yolk
4) Then add in half flour & half milk and beat slowly then the balance of the flour & milk beat until creamy
5) Then add in egg white to beat

6) Add in almond flour and mixed well.
7) Take out 1/3 of batter mixed with the cocoa powder
8) Pour in the plain batter 1st, the follow by the cocoa batter on top.
9) Bake for 45 minutes. (Rice cooker choose baking function and set timer for 45 minutes) 
8) Pour in the toppings of almond crust on top of the baked cake and bake for another 10 minutes.

Toppings:
1) Mixed well with the butter and honey.
2) Make sure every piece of almond flakes is coated well.
 Look nice?

Marble Butter Cake
The almond crust is more crunchy as I pre-cook it before mixing with honey & butter. But I do not understand how come the almond crust cannot be stick well on the cake. Ann do not like the cocoa taste. She said it is bitter. However I believe majority of kids love chocolate flavor so much. She just like the plain one. Next round I have to pour in the toppings to bake together with the cake to let the almond crust stick together. Hopefully it will be more success next round. Looking forward!

Orange Almond Butter Cake with Honey Almond Crust

Ingredients:
125gm salted butter

1/2 tsp vanilla essence

5 tbsp Orange Zest

Toppings:
50gm honey
80gm almond flakes
30gm butter

Method:

3) Cream butter & 150gm sugar until pale then add in vanilla essence & egg yolk

6) Add in orange zest & almond flour and mixed well.
7) Bake for 45 minutes. (Rice cooker choose baking function and set timer for 45 minutes)
8) Pour in on top of the baked cake and bake for another 10 minutes.

Toppings:
1) Mixed well with the butter and honey.
2) Make sure every piece of almond flakes is coated well.

Enjoying
The orange taste is not strong enough. The honey I had at home is not enough to coat every piece of almond flakes. The almond flakes is not crunchy as I didn't pre heat it. However, my family everyone enjoying it very much. Ann alone already clear 1/4 of the cake. It really thumbs up & my friends said it really look like from bakery shop. Haha:) Great to hear  that but still room of improvement.:)

Mickey Blueberry Chocolate Chip Cupcake

With the same ingredients & method I made it. Recipes from here. Putting up the fresh blueberries as Mickey head & 2 chocolate chip as Mickey ears. The outcome is so cute. This is the idea from Ann. Thanks so much with her creative thinking. :)

Cha Soba

Since it was a working day, I prepared a quick lunch for myself today. As I need to bake the cupcakes for tomorrow. Cha Soba is Ann & hubby favourite. I seldom take it especially with cold condition. Hubby taught a new way of having it. It is the sesame sauce.

Sauce Ingredients:
1 tbsp Mayonise
1 tbsp sesame sauce
2 tbsp water
1 cube of ice

Method:
1. Mixed well with all ingredients and serve.

Yummy! Yummy!
This is simple & easy. Yummy and also healthy.

九层糕

I tried making this last time but failed. Coincidentally, I found the kuih lapis mix from a ingredient shop. With it, this is so much easy to make.

Ingredients:
250g kuih lapis mix
300ml coconut water

Method:
1. Mix well then separate the batter into 2, one of it adding red coloring.
2. Each layer steam for 8-10 minutes and depends to the mould base you are using.

Although it is not perfect, but it taste not bad.
Each layer can be taken off one by one. :) The layer mixed was due to not enough cook by adding another layer on it. TIps: Must make sure each layer is cook enough before adding another layer.

Piggie Egg Custard Bento

A simply bento. Simple easy but need time.
Ingredients:
1 egg
1 mushroom

Seasoning
salt
soy sauce
chicken stock powder

Method:
1. Beat the egg
2. Sieve the egg to avoid bubbles
3. Pour a litre of water to the rice cooker
4. Select Baking / Boiling soup function with timer 20 minutes
5. Cover the bowl with lid

Decor
A crab stick
Seaweed

Lastly and not least, I decor it as a piggie. If got chicken essence pour a bottle on top before serving will be nice but I do not have chicken essence at home. I knew Ann love chicken essence. In future if I got chicken essence sure i will try it out again.

How to make Egg Sheet

Egg Sheet always needed for making bento. At this moment I still dunno how to make color egg sheet. So I only can make yellow & white color. Previously, I dunno the how to make the texture smooth and firm.

Ingredients:
  • 1 tbsp water
  • 1 tbsp cornstarch
  • 1 egg
  • 1 tbsp sugar
  • A dash of salt
  • Some corn oil
Steps:
  • Dissolve the cornstarch in the water.
  • Add in the others ingredients into 2 bowls. (I seperate the egg yolk & egg white since I want to make 2 colors.)
  • Beat with fork until smooth
  • Pour the egg mixtures into the sieve
  • Wipe the pan with oil and heat up
  • I fried it using low heat after the pan heated up.
Here the egg sheet of yellow & white!

There is a tutorial video in youtube too but using microwave. I do not have microwave so I fried it. Now I need to find out how to make color egg sheet. Extra egg sheet can store in a air tight container and put into the fridge to keep it fresh. I can last about a week. Just heat up again when need to use. :)

Chocolate Fudge Brownies

I like baking actually. Before marriage, I always did baking at home for my hubby. But now.....already long long time no more do baking. Few days ago, saw a recipes book at my mom house and suddenly made me want to do baking. Since my house is small and no oven, I invite WY to bake together at her place. Early morning, I went to buy those ingredients in Serdang and went her house.

Ingredients:

250g Dark cooking chocolates, broken into pieces
150g Marjerin / butter
180g Brown sugar
3 eggs
120g Plain flour (sifted)
120g White chocolates, cut into chunks
120g Toasted cashnuts
4 tbsp Icing sugar, for dusting


Method:

1. Melt the dark chocolates and butter by using a double boiler or microwave oven with medium power for 2 minutes. stir until the mixture is smooth.

2. Add sugar and stir it well. Add eggs, flour and mix till well-combined.

3. Fold in white chocolates & cashnuts.

4. Pour mixture in to slab pan. (Wipe think layer of butter on the surface of the pan)

5. Bake in pre-heated oven at 180'c for about 30 minutes till cooked.

6. Cool completely in pan and dust with icing sugar before serving.

While we are doing baking, Sheyanne was playing with Le Ann. The naughty Sheyanne always want to eat people food. She sticked with WY's maid who was feeding Le Ann there and also never bothered whether I m around or not. WY's maid is so kind and have to feed 2 babies at the time. Haha:) After that, Sheyanne kacau people again when the maid is feeding Ryan lunch. Haih...Sheyanne want to eat also and drink soup. Haha:) After the kids finish, we had our fried rice as lunch by her maid also. Sheyanne sticked with me again to eat again. Hehe:) After that, she had her bottle of milk and while waiting the cake ready, we had some shooting photos of them. When the cake ready, I packed and bring home. Sheyanne was sleep in car while on the way home.

Sheyanne:" Yes, you looking for me??"

Conclusion, the taste is good but the outer layer a bit hard. Hubby said it is a bit too sweet. Actually I feel sweet too but next time will reduce the sugar.
