Homemade Cheesecake

Ingredients:
10 pcs Marie Biscuit
70g butter
1 cup yogurt
250g cream cheese
4 spoons of starch
7 spoons of sugar
200ml whipping cream
2 eggs (grade AA)

Method:
1. Make the biscuits to small pieces until powder like then set aside
2. Cut the cream cheese into small pieces and mix well with the sugar.
2. Add in yogurt then mix well.
3. Pour in the whipping cream and mix well.
4. Follow by the eggs to the batter and mix well.
5. Sift the starch into the batter and mix well.
6. Mix butter with the biscuit powder.
7. Put the mixture of butter biscuit in the rice cooker and put evenly.
8. Pour in the batter finally.
9. Bake for 70 minutes.
 Cheese Cake
Taste nice but not enough smooth.

Blueberry Chocolate Chip Muffin

Ingredients:
250g muffin mix
2 eggs
50ml water
90ml Corn Oil
2 spoons of blueberry jam
Some fresh blueberries

Method:
1. Sift the muffin mix
2. Add in eggs and beat at high speed
3. Add in water & corn oil beat until creamy batter
4. Add in the blueberry jam and mix well.

5. Pour into cupcake cup with topping with some chocolate chip & fresh blueberries.
6.Bake for 45 minutes.

After baked, yummilicious!

Egg Tarts

Without an oven at home, really restricted me to bake sometimes.Hope I can have a bigger kitchen with full equipment for baking very soon. However, I saw the frozen pastry from Aeon that day and very fast i grabbed it. Wanna to try making egg tarts with it.


Egg Tarts Filling
3 Eggs
240ml water
100g castor sugar
1/4 tsp of vanilla essence
1/4 tsp white vinegar (I didn't add in this time)


Method:
1. Dissolve sugar in hot water, set aside to cool.
2. Break eggs in a mixing bowl, lightly stir. 
3. Add in syrup (no 1), vanilla extract and vinegar, lightly stir well to combine.
4. Sift twice, set aside.
5. Trim off about 1cm puff pastry (optional, you may use the whole piece), arrange in a 12 holes muffin pan. 
6. Pour egg custard filling in the puff pastry case, about 90% full.
7. Bake at pre-heated oven at 180c for 35mins or till golden brown.
8. Remove from oven and leave to cool.



Remarks: 
Due to I do not have a conventional oven at home, I bake using rice cooker. Then I bake again in the toaster for 10 minutes or until the side of the pastry become brown. :)

I quite satisfy with the outcome this time. Although it is not very perfect due to the pastry at the bottom is not crispy. But anyhow, it still taste very good. Jayne love egg tarts very much. She ate half of it by herself. But my family mentioned that the filling is a bit too watery, may be next time I have to reduced some water. :)

Homemade Donut

Ingredients:
350g strong white flour
Pinch salt
30g sugar
50g margarine
7g yeast
65ml warm milk
1 large egg, beaten

Coating
3 tbsp sugar
1/2 tbsp ground cinnamon

Method:
1. Sieve the flour and salt in a big mixer bowl
2. Add in sugar and mix well.
3. Add in margarine and use the flour to mixed well by rubbing it.
4. Add in yeast and mix well.
5. Add the beaten egg in the middle of the flour and warm milk.
6. Kneel the dough until it is firm.
7. Cover the dough and keep in a cover and warm place for about 1 hour.
8. Take out the dough and kneel for few moments.
9. Cut the circle donut shape.
10. Cover all the donut ring for another 20 minutes.
11. Heat the pan with half cooking oil and fried it until golden brown.
12. Lastly, coat it with the sugar in another pan and serve.
Mini Donut
As for 1st time experience making it. Consider not bad. I feel that not soft enough. Perhaps I didn't kneel the dough enough. This is not so sweet recipe. In future will try add another 10g of sugar may be. :) I found that the thickness of donut is too thick. Should cut it with thinner thickness (about 1.5cm) of dough next time. There is still room for improvement!

Chocolate Mini Cupcake

Ingredients:
(Made 13 mini cupcakes)
250g Choclocate Muffin Mix
2 eggs
50ml water
90ml corn oil

Method:
1. Sift the muffin mix
2. Add in eggs and beat at high speed
3. Add in water & corn oil beat until creamy batter
4. Pour into cupcake cup with topping with some almond nuts and bake for 45 minutes

 This recipe is moist! Yummy!

I love this recipe as it is really easy & simple. Very delicious too. Purposely bake with smaller cup so easy for kids to eat. :) I think I should pour lower level before bake as it will raised up during baking. Mine a bit over flow. Otherwise it can bake about 14 mini cupcakes!

Butter Cake

Supposed I wanted to make a Marble Butter Cake but failed. I didn't made the cocoa powder mixture by just adding some cocoa powder on the top of the cream batter. Will try it again next time. However, The result still good, and found out that today is more soft that the previous attempt. Get the recipe Here.

The recipe actually I just cut it half coz most of the time only hubby and I can finish the whole small cake the next day. :)

Butter Cake

Ingredients:
250gm Butter (Salted)
4 eggs (Large)
50gm + 150gm sugar
200gm self raising flour (Sifted)
60ml milk
1 tsp vanilla essence

Method:
1) Preheat over 180'C, (I use rice cooker), separate egg white & yolk
2) Beat egg white until soft peak then add in 50gm sugar & beat.
3) Cream butter & 150gm sugar until pale then add in vanilla essence & egg yolk
4) Then add in half flour & half milk and beat slowly then the balance of the flour & milk beat until creamy
5) Then add in egg white to beat
6) Bake for 45 minutes. (Rice cooker choose baking function and set timer for 45 minutes)

Chocolate Blue Berry Cake & Onde-onde

Since the new rice cooker can do some simple baking. I m started addicted in baking, cooking and making bento for my kids now. 1st trial of the chocolate blueberry cake.

Besides, I tried to make onde onde also. Recipe from Conny Chin. Thanks for the recipe.
Ingredients:
  • 150g sweet potatoes
  • 50g glutinous flour
  • little water
  • some salt
  • santan
  • Gula Melaka

 1st trial - not bad!
 Practice make perfect
Total done, a bit too much!
This need many skills on wrapping. The difficult is making the dough is not easy. :) Will try make better next time.

Blueberry Muffin

Today bento rest day to me. Coz Ann didn't go to school and I m working half day too. But after work, I tried on the new small rice cooker from Toshiba to bake muffins.

Ingredients:
Muffin Mix
4 eggs
140ml Corn oil
115ml Water
Blueberry fillings
 Ready to bake
 Done!
With rainbow colors
Mix well with all ingredient and its ready to be bake for 45 minutes. Just simple & easy. Taste not bad but feel that the filling is not enough & I forgot to top up with some nuts so that it will be more yummy! Try again next time!
